Now is the time of year when rhubarb is readily available. Why not get the preserving pan out, celebrate this most English of vegetables, and try some of the following recipes:

Rhubarb Ketchup
A fruity alternative to tomato ketchup, a useful way of using up excess old rhubarb.

Rhubarb and Orange Jam
A good breakfast jam, can be made with ginger as well.

Elderflower and Rhubarb Jam
A combination of the best two early summer flavours.

Rhubarb and Ginger Schnapps
A delicious summer drink, spiced up with a hint of ginger.
Rhubarb Schnapps
A special drink ready in time for the summer, great served with fizzy wine.

Rhubarb and Ginger Jam
A subtle tasting jam with crystallised ginger.
Rhubarb Chutney
Recipe for a rich dark chutney with apricots.

Rhubarb Relish
Make with maincrop rhubarb, good with curries, oily fish and cheese.

Schnapps
Father's day
Want to make some kind of seasonal perseve / marmalade / chutney (etc. you catch my drift, some kind of delicious jarred good) in time for father's day and was hoping you could maybe help.
I love the blog and am currently brewing my rhubard and ginger snaps and will be finishing off my jam tonight.
Do you have a suggetsions? I'm really quite new at this jarred good making malary and have very little knowledge of seasonal fruit and veg.

Elderflowers for fathers day
Thanks for commenting and I'm glad you like the blog.
I like the idea of a preserve for father's day, especially one made from seasonal produce.
Rhubarb is, as you are finding out, the current best crop for preserving.
Rhubarb Chutney http://www.pickleandpreserve.c...utney.html is very good with cheese and would make a nice present if you dad likes ploughman's style lunches. If you made it now it wouldn't be ready for eating in August, which may be too long to wait.
Elderflowers are just starting to appear in the hedgerows, so I'm looking forward to making some Elderflower Cordial http://www.pickleandpreserve.c...rdial.html, this would be ready to drink straight away and is great for summer evenings (it would also mix well with your Rhubarb Schnapps).

If your dad has a sweet tooth, and you can wait until next week, then hopefully I'm going to be trying some Rhubarb and Elderflower Jam - weather permitting.
