A straightforward recipe for a warming winter drink.
700ml gin (supermarket own is fine)
500g damsons
150g white granulated sugar
Wash the damsons and allow to dry.
Prick the fruit several times with a fork and put in a large (2litre is ideal) kilner jar with a watertight seal. A large necked bottle would also work, as long as you can get the damsons in.
Add the gin and the sugar to the jar and give the whole lot a good shake.
Shake every day until the sugar is dissolved and then every few weeks just to stir up the fruit.
Strain the damsons out using muslin before drinking, after taking out the stones you can use them in a fruit crumble.
You can drink this after 3 months, but ideally wait up to a year. Don't leave the fruit in longer than 6 months.
It's worth tasting after a month or so, and topping up with a few tablespoons of sugar if you feel it needs it.
