Gooseberry Chutney

A basic gooseberry chutney, good in a sandwich or with a poughmans.

1300g gooseberries
250g onions
500g sugar
280ml water
15g salt
570ml vinegar
1 tbsp ground ginger
1/2 tsp cayenne pepper

Method

Top and tail the gooseberries.
Finely chop the onions and cook with the gooseberries in the water until they are soft.
Add the remaining ingredients and simmer , stirring occasionally, until the chutney becomes thick.

Pot in sterilised jars.

Leave for 3 months to mature before using.

Where is the best place to store the Gooseberry chutney for 3 months??

Storing Chutney
Hi Stephen
The chutney needs to be stored in a cool dry dark place. Under the stairs is ideal, or in a garage, or in a cupboard away from a radiator.
Once opened it's best kept in the fridge.
