A recipe for very easy to make lemon cordial.
5 lemons
250ml water (approx)
250ml granulated sugar (approx)
1/2 tsp citric acid
Squeeze the lemons, this is easier if you put them in the microwave for a minute first.
Measure the juice, put in a saucepan and add the same quantities of water and sugar - for example, if you have 250ml of lemon juice, add 250ml water and 250ml granulated sugar.
Add 1 tsp citric acid for every litre of liquid.
Bring gently to a simmer, then allow to cool slightly before bottling in sterile bottles.
Dilute to taste with water.
Lemon cordial should be stored in the fridge and used within three weeks. It can be frozen in plastic bottles.
This recipe can of course be adapted for more lemons if you wish.
