Lime Chutney

A tangy vinegar based chutney, retaining the sourness of the limes.

12 cal (approx)

6 limes
1 tbsp salt
1 medium onion finely chopped
300ml cider vinegar
1 tsp ground mixed spice
2 tbsp mustard seed
50g raisins

Method

Chop the limes finely & sprinkle with the salt, leave to stand for 12 hours.
Place all the ingredients in a saucepan & simmer for approx 45 minutes or until tender & thickened.

Pot in sterilised jars.

Leave for 3 months to mature before using.
