Margery's Marmalade

A rich dark marmalade made with the addition of black treacle.

3lbs Seville Oranges
3 lemons
6 pints of water
6 lbs Demerara sugar (for a darker brew, 5 lbs & 2 tbs Black Treacle)

Method

Wash and scrub the fruit
Put whole fruit with 2 lemons in a pan with the water
Cover and simmer until easily pierced, about two hours – they lie on the top and get half cooked so they must be turned over
Leave to cool then cut up the fruit
Remove pips and put them back to cook for 5 minutes (in muslin bag)
Strain liquid onto fruit and add juice of other lemons
Add the sugar and treacle to the fruit liquid
Boil until setting point is reached
Bottle in sterilised jars
