Onion Marmalade with Caraway Seeds

A sweet onion marmalade with the added interest of caraway seeds, or try substituting a few rosemary sprigs for the caraway.

1.2kg onions sliced into thin rings
3 tablespoon salt
900g granulated sugar
500ml vinegar
1 1/2 tsp cloves in a piece of muslin
2 tsp caraway seeds (or a few sprigs of rosemary)

Method

Mix together salt and onions and leave to stand for one hour. Rinse and dry.

Dissolve sugar in vinegar in pan and add muslin bag. Simmer for five minutes and then add onions and caraway seeds or rosemary sprigs.

Simmer for two to three hours, skimming off any scum until a translucent jam is formed. The marmalade will set more in the jar, so don't over do it.

Ladle into hot, sterilised jars.

Improves with keeping and lasts two years.
