Quince Brandy

A warming drink using spices and the unique scent of quinces.

500g quinces (about 3 small ones)
70 cl brandy (as cheap as you dare)
1 cinnamon stick
2 star anise
5 cloves

Method

Wash or wipe the quinces, then quarter.

Pack the fruit into a kilner type jar and add the spices.

Fill to the top with brandy and leave for at least six weeks.
