Spicy Pickling Vinegar

A spicy pickling vinegar for use making pickled onions or for adding to chutneys.

7 cal (approx)

2.5 litres malt vinegar
1 tsp cloves
4 tsp coriander seeds
4 tsp mustard seeds
4 tsp cumin seeds
30g fresh ginger
10 cardamons
1 tsp garam marsala (not ground)

Method

Place all the ingredients in a large stainless steel pan and bring slowly to the boil.

Turn off the heat and cover, then leave overnight to cool and to let the flavours infuse.

Strain and bottle in sterilised bottles.

You can use any spices you like to flavour vinegar, just aim for around 15g - 30g per litre.

If you like your pickled onions hot you can also add a fresh chilli to each jar.
